Recipe:
Prepare one cup of quinoa according to pkg. directions.
In a bowl, combine one red bell pepper chopped, one can of drained corn and one can of drained and rinsed black beans.
Mix in 2 tablespoons of olive oil, 3 tablespoons of lime juice, 1 teaspoon of parsley, and 2 teaspoons of cumin.
Once the quinoa is cooked, toss it with the rest of the mixture. Eat warm or chilled.
Warning: this could be addictive!
